Vanilla 2025 will be held April 23-25, 2025 in Jersey City, NJ at the Hyatt Regency Jersey City on the Hudson, adjacent to New York City. This conference will consist of a two-day symposium and a potential one-day workshop.

The meeting will focus on the future of vanilla and vanillin. It comes on the heels of a steep decline in the price of vanilla beans, after a prolonged period of high prices for many years. We hope to use this conference to address new, unexplored topics affecting the vanilla industry.

 
Since the last meeting in 2021 in Florida, the price of vanilla has decreased to less than $50/kg. While the price is down, it has not increased the demand. Instead, many companies continue replacing real Vanilla Extract with Vanilla WONF.

Vanilla 2025 will focus on important issues that are sure to affect vanilla production in the coming century including global warming, the FDA regulation of vanilla, establishing a stable supply chain, and developing and discovering new natural sources of vanillin.
